FALAFEL-blog

These falafel burgers are so easy to make, taste delicious, are gluten free, low fat and packed with protein and fibre. We love putting them on top of a big green salad with some fresh quinoa tabouli, a big dollop of tzatziki (recipe below) and some warm gluten free pita slices.

INGREDIENTS

1 can chickpeas, drained (or 2 cups cooked)

1 clove garlic, minced

2 Tbsp. red onion, finely diced

1/2 cup parsley, chopped

1 Tsp. cumin powder

1 Tsp. coriander powder

3/4 Tsp. salt

pinch cayenne pepper

pinch black pepper

1/4 cup garbanzo bean flour (or other gluten free flour)

2 Tsp. lemon juice

2 Tsp. olive oil

  1. Place everything except the lemon juice and olive oil into a food processor and mix to a grain like consistency.
  2. Transfer to a bowl and add the lemon juice and olive oil. Mix well until a dough is formed.
  3. Shape the falafel into patties, you can make 8 small ones or 4 larger burgers. Dust the outside of each patty lightly with a little more flour.
  4. Heat about a tablespoon of oil in a pan and cook the burger on medium heat for about 3 minutes on each side until browned and warmed through. Eat & enjoy!

TZATZIKI INGREDIENTS

1 cup full fat yoghurt (or dairy free alternative)

1 cup cucumber, peeled and grated

1/4 cup packed mint, finely chopped

1 clove garlic, finely chopped

1 Tbsp. lemon juice

1/2 Tsp. sea salt

This a typical greek yoghurt dish that goes really well with the falafel. Mix everything together in a bowl. Let sit for an hour to allow the flavors to develop. Enjoy!
